Juanita’s Veggie Mania Soup

Juanita’s Veggie mania Soup
Recommend organic products
Low salt vegetable broth
4 cloves of garlic (chopped)
1 white or yellow onions (chopped)
1 Green pepper (chopped)
1 Red pepper (chopped)
1 Yellow pepper (optional) (chopped)
1 teaspoon oregano
1 teaspoon basil
Juice from 1 to 2 lemons
Pepper
8 ounces Tomato sauce
1 green tomato (chopped)
2 celery stalks (chopped)
2 Carrots (chopped)
2 potatoes (sliced)
2 corn on the cob (grated)
1/4 lb fresh okra (chopped)
1/4 lb of Fresh green beans

Saute garlic in small amount of the vegetable broth for 2 minutes. Add 8 ounces of vegetable broth and 1/2 of the onion, celery, and peppers. Simmer for 2 additional minutes. Add 8 more ounces of vegetable broth, tomato sauce, lemon juice, oregano, basil, green tomato, and green beans. Simmer for 15 minutes. Add carrots, potatoes, corn, and okra and turn the stove top off. the vegetables will absorb the heat easily and cook to perfection. We do not use salt but I’ll leave the salt to you. But, if you like, pepper and salt. As my mom would say, “Deelicious”
Enjoy. If you’re not feeling up to par, pour one serving into your soup bowl. Then, chop up one clove of garlic and place on top of the soup. Healing is just a few spoonfuls away.
